Sweet and tangy CSA kohlrabi with apple salad
Adapted from Food Network. You’ll want to peel the kohlrabi before eating it, no matter what recipe you try. The skin is too tough for easy eating.
2 Tablespoons of olive oil
1 Tablespoon of white wine vinegar or rice vinegar
1 Teaspoon of dijon mustard
¼ teaspoon of sugar
Salt to taste
2 kohlrabi, peeled and cut into matchsticks
1 apple, cut into matchsticks. Tarter apples like Granny Smith work better than Red Delicious, but all apples work pretty well in this recipe.
Cut and slice the apples and kohlrabi. Stir the olive oil, vinegar, mustard, sugar and salt together. Mix the apples and kohlrabi together and toss with the vinaigrette.
