CSA Zucchini fritters

Adapted from The Modern Proper.

  • 2 medium zucchinis

  • 1 small onion

  • 1 cup of flour

  • 2 teaspoons of baking powder

  • 1/2 cup parmesan

  • 1 large egg

  • ½ cup milk

  • Pepper

  • 1 teaspoon cumin

Line colander with kitchen towel and place in sink or over a pan. Grate zucchini and onion over the cloth and toss with salt. Wait for about 10 minutes and then squeeze out the excess water.

Combine flour, baking powder and parmesan cheese in another bowel. Make a divet in the mixture and add the egg, milk, pepper and cumin. Stir until well incorporated. Add zucchini and onion and stir.

Add about ¼ inch of oil in a heavy bottomed pot over medium heat. Working in small batches, scoop zucchini batter and slowly add to oil. Fry on each side till golden brown.
