Plant Spotlight: Rainbow Kale
A kale variety that can survive and thrive in Georgia’s swinging spring temperatures. Turns more purple in the cold and greener with warmer temps. Tasty and tender enough for a fresh salad (especially good with oranges, cranberries and almonds) while retaining enough body to handle the flash frying of a stir fry.
Growing notes:
• Needs room to grow, preferably 10 - 12 inches.
• Plant will produce with poor soil, but does much better with compost added.
• Will bolt in the high heat. Stave off bolting by planting near a bean trellis (or other plant) to shade while temperatures rise.
