I’m not someone who follows recipes — even on the best days. Please use these as cooking inspiration, not as fully-formed recipes. I cook a lot of stir fries, soups, noodle dishes and salads. I often use miso, soy sauce, hot peppers, butter and plant milk alternative. My most often-used kitchen gear is made of cast iron. Where there’s a good recipe I’ve used, I’ve tried to link to it. Hopefully, these photos and descriptions give you a jumping-off point in your kitchen!
Baked eggplant
Cut the eggplant into rounds about 1/2 inch side, cover in olive oil and bake at 350 degrees for 15-20 minutes before flipping and baking for another 15-20 minutes. I added salt and harissa seasoning to these Easy to add to tacos, sandwiches, salads and other meals for extra flavor during the week.
