Pasta with Sugar Snap Peas
An easy weeknight dinner that you can put together in the time it takes to cook pasta.
4 slices of chopped bacon
8 ounces of pasta, spaghetti or fettuccine works great
½ pound sugar snap peas
Parmesan or Pecorina Romano
2 tablespoons of butter
Bring a large pot of water to boil and add salt.
While water heats, put pre-chopped bacon into a skillet and cook until lightly crispy and the fat has rendered.
When water begins boiling, add your pasta. Right before the pasta finishes, add the peas. Cook for approximately 30 seconds. Drain the water, setting aside about ½ cup of the pasta water.
Add pasta with peas, bacon and butter. Add half the pasta water and toss well to incorporate all the ingredients. Add more of the pasta water if needed. Add salt, pepper and parmesan as desired.
